Health condition has become better in the last years. Especially hip dysplasia is not as common as it was 10 years ago, but there are still a lot dogs with ED, spondylosis, cauda equina syndrome. Another problem in GSD are skin diseases and perianal fistula. In general!!! working lines are mor healthy than show line. But that really depends on the line and the individual dog. In my opinion there ist actual no difference between east, west or Czech bred dogs concerning the health problems. I´ve seen sick east lines and very healthy west bred dogs.
If you choose a breeder carefully you will be able to get a healthy dog for sure.
I´m no expert to show line GSD, so a cannot answer your question which show lines are healthy.
The sloping back is breed standart. It´s not that distinct in the working line GSD. I (for myself) prefer a straight back. So I would look for a breeder who breed rather straight back than sloping back.... But that is only my personal opinion, as I already wrote: the (slightly) sloping back is breed standart and is wanted.
